Cá hồi làm sạch, để ráo rồi cắt miếng vuông vừa ăn.
Trộn 5 muỗng canh bột mì với 2 muỗng canh ngũ vị hương và 1/2 muỗng cà phê. Lăn cá hồi qua lớp bột này để bột bám đều lên các miếng cá.
Hành lá và ngò rí rửa sạch, cắt nhỏ hành lá. Gừng cạo sạch vỏ, cắt sợi nhỏ.
Làm nóng chảo, cho 3 muỗng canh dầu vào chảo, khi dầu sôi thả cá vào chiên vàng.
Đun sôi với 4 muỗng canh nước tương, chút nước rồi cho 1 muỗng cà phê đường vào hòa tan. Thêm gừng sợi và hành lá cắt nhỏ rồi tắt bếp. Thêm 1 muỗng canh giấm vào, đảo đều.
Khi ăn lấy cá chiên ra đĩa hoặc chén, rưới nước sốt lên trên, rắc thêm chút ngò và hành lá cho đẹp mắt. Món này nên ăn ngay khi miếng cá còn nóng giòn là ngon nhất.
